Welcome back to my series, where I'll show you that cooking Indian food is actually very simple. Today we're making Masala Egg Curry, also called Dhaba-style Egg Curry. You definitely need to try this.; This dish is simple yet delicious. I'll start by cutting one large red onion and three to four tomatoes.; While I'm chopping vegetables, I'll also boil six to seven eggs to medium doneness, so the yolks are still soft.; Then I'll heat oil and fry the eggs with turmeric, chili powder, and salt for two to three minutes, then set them aside.; The complete recipe and ingredients will be posted below. In the same pan, heat some more oil and add the following whole spices: cinnamon,; black cardamom, green cardamom, and bay leaves. Add the chopped onions and sauté over medium heat for eight to ten minutes.; Once done, I'll add the tomatoes, green chilies, ginger-garlic paste, and the spices that will be listed below. To make the sauce, add one and a half cups of water, then cover the pot and cook over medium heat for fifteen to twenty minutes.; Finally, add a handful of chopped cilantro and the eggs, and now it's time to enjoy.
